Winemaking: Cold maceration of the grapes at 8-10°C for 4 to 5 days in stainless steel tanks. After this operation, sowing of selected yeasts to carry out the alcoholic fermentation, which is carried out at temperatures between 24 and 26°C, lasting an average of 12 days. Spontaneous malolactic fermentation. Contact in oak for 6 months.

Tasting notes: Ruby red color with blackish flashes. On the nose persistent sensation of bell pepper, typical of the variety combined with notes of vanilla. In the mouth complex entry reminiscent of spices and bell pepper. It is ideal to accompany goats, lambs, and traditional spicy foods.
